My adaption of a wonderfully rich oatmeal cookie from the Secret Teenage chef & Food network
I wanted something like a chewy health bar with plenty of fiber from oatmeal and anti-oxidant power from the Goji berry. But it also had to be relatively low in fat and sugar. So with a few quick healthy substitutes for the high calorie brown sugar and Butter, here’s what I came up with:
Honey Oatmeal Cookie
3 Tbs. smart balance butter spread
*1/4 cup brown sugar plus 4 tsp. Stevia
1/4 cup honey
1 egg
1 Tbls. water
1/2 cup whole wheat flour
1/2 tsp. Kosher salt ( A healthier type of salt )
1/4 tsp. Baking Soda
1 1/2 cups multi grain oatmeal or reg.
1/3 cup Goji berries (moistened in a little warm water for a few minutes.)
!. Preheat oven to 350 degrees F. Line a baking sheet with parchment paper for easy cleanup or use non stick spray.
2. Mix together Butter spread, Brown sugar, honey, egg & water thoroughly.
3. Sift together four, baking soda, salt & stir in oats.
4. Drop by heaping teaspoons onto cookie sheet. Bake 12-15 minutes.
Makes up to 30 cookies. *1/2 cup brown sugar if no Stevia is used
